Poor man's egg-curry

Hello foodies,

This is a very simple and minimalistic recipe.




Ingredients:
Eggs - 4 [preferably hen eggs, duck, emu or other birds will do - adjust the number according to the size]
Onion - 1/2
Green chilly - 1
Ginger-garlic paste
Your cousin's wife's secret masala [Everest or MDH egg curry masala will do too]
Mustard seeds
Cumin seeds,
Amul butter [oil will do too]
salt and pepper,
turmeric powder, red chilly powder

Protocol:
[wait, did i just write protocol ??]

Boil 4 eggs in water with 2 tsp of salt. Keep for exactly 4 min after the water starts boiling.
After it cools down, decant water, peel the eggs and cut each in half. [or a power of 2.. jus kidding]
Put a tsp of salt, a tsp of pepper and a tsp of masala. Incubate [sorry, keep] for 10 min.

Curry:
Add 4 tsp of amul butter in a kadhai and let it melt.
Add cumin, mustard seeds, 1 tsp turmeric, 1 tsp red chilly
Cut the half onion into fine pieces.
Fry the onion in the butter till light brown.
Cut the green chilly and add it to the onion.
Add 2 cups of water. Let it boil.
Add salt, red chilly powder and masala according to taste - i added about 1 tsp of salt and masala and a pinch of red chilly.
Add the eggs. Stir with a wooden ladle - do not use metal - it cuts the eggs.
Let the curry thicken a bit.
Now for the secret ingredient - sprinkle a tsp of 'besan' to give curry a good consistency.
Boil till the curry is thick enough for taste [assuming we start with size zero :P]

Aha! It is now ready. Serve hot with bread.

Spicy shrimp with rice




Needed:

Shrimp (duh !!)

rice (again duh !!)

onions 1-2

tomatoes 2-4


spices:

ginger - abt 2 pieces of 1 inch

garlic - 2-3 cloves

some cumin seeds (jeera)

some mustard seeds

some coriander seeds (dhania)

peppercorns / powdered pepper

salt to taste

red chilli powder,

turmeric powder,

sugar

(essentially all the spices except asofoetida (hing))


procedure:

1) dry the shrimp (dead, deveined and headless... preferrably tailless too).. sprinkle some salt over them... then fry in a pan with little oil till they are crispy.. dont try to eat them like that to check whether they are crispy, they taste awful.. but try poking them with a fork.. remove the shrimp once they are fried.. let the oil be there

2)mix all the spices mentioned above in a small bowl with half a tablespoon of olive oil (or any other oil).. make a 'paste' (this would depend on whether u hv a blender or not)

3) finely chop onions and tomatoes and fry them in the same oil as before.. fry till the tomatoes dry up..

4) add the spice mixture and fried shrimp.. fry them for some time (until u get bored).. sprinkle some salt and sugar on the mixture..

5) hopefully by this time, u shud hv cooked rice in a pressure cooker.. serve the shrimp with the rice..

Easy Breezy Vegetable Soup

This soup is super easy to make.And very healthy too!!!

Needed

Onion- chopped one large
Garlic - 4 cloves
Tomatoes - 2 large chopped
Capsicum- 2 medium chopped
Carrots - 2 medium chopped
Oil,Salt,Pepper and Italian seasoning
Milk

In a little oil, cook onions and garlic.
When the onions are transparent, add the carrots.Cook 1 minute
Add the capsicum - Cook 2 minutes
Add the tomatoes - Cook 2 minutes
Blend the whole mixture together. ( Blend it to a rough consistency)
Cook again on low heat,
Season with Salt,pepper and Seasoning
Add 1/2 cup of milk
Break bread slices into pieces, fry in a little oil for croƻtons.

Serve hot

Serving Vegetarian Lasagna...



Well..this was a modification of an old recipe I had.My father -in-law doesn't like mushrooms..and my technology - obsessed husband can't eat brinjal.Anyway..grey matter was pressed into action..and Voila...out popped this recipe.It turned out really well...and my baby sis here..was rapturously licking her fingers...Success ...I think so!!!

Needed

Lasagna sheets
Olive Oil
Salt

For Tomato Sauce
Fresh , firm tomatoes - 5 medium sized
Onions-chopped fine - 1 large
Garlic- chopped /grated - 4 cloves
Italian seasoning - containing Basil,thyme,oregano


For White sauce
Butter - 2 tbsp
flour - 3 tsp
Milk - I cup
Cheese grated - 1/2 cup ( Use Mozzarella and Cheddar mix)

For the filling
Spinach -chopped - 250-300 gm
Paneer- 300 gm-crumbled

Method-

To make Tomato sauce

Make cross shaped cuts on the tomatoes.
Place them in a vessel with boiling water.
Allow them to boil for 8 minute
Hold under cold running water, and remove the peel
In a pan,add some olive oil
Cook onions and garlic.
Add chopped ,peeled tomatoes.
Blend the whole mix to a semi-smooth consistency.
Cook on low flame.
Add salt,freshly crushed black pepper and Italian seasoning.

To make White sauce
In a saucepan, melt the butter
Stir in the flour with a whisk
Cook over low heat,stir continuously.Do not allow to brown.3-5 minutes
When sauce thickens,season with salt and pepper.
Add 1/2 cup of grated Cheddar and Mozzarella cheese.

To make the filling
In oil ,fry some onions and garlic .
Add spinach and continue to cook
Add crumbled paneer .
Add salt to season.

To prepare Lasagna sheets

Boil some water.Add a pinch of salt to the water , and 1/2 tsp of olive oil
Add Lasagna sheets.
Cook Al dente.Drain .

Layering Lasagna

In a bowl, spread some olive oil to the base.
Place a sheet of Lasagna,cover the base of the bowl
Spread some of the filling
Add white sauce
Add some tomato sauce
Grate cheese( cheddar+ Mozzarella) onto the layers
Repeat layering
Add 1/2 cup of milk over the whole dish ( to keep it soft while baking)
Cover with cling film/ aluminium film

Preheat the oven to 180 degrees celcius

Bake the Lasagna for 15 minutes.Till the cheese melts and begins to brown.

Serve with garlic bread/ toasted bread
